Cucumber-Mint Ice Cubes

Summer is right around the corner and I’m already craving icy beverages of all sorts: cold-press coffees, sweet teas, lemonades . . . milkshakes (but I like a milkshake any time of year). Let’s start this party with something simple – cucumber-mint ice cubes that chill your water and infuse it with flavor.
Put this in a blender and pulverize it really well:
2 peeled and chopped cucumbers
A big handful of fresh mint leaves
6 cups of water
Pour the mixture through a strainer lined with cheesecloth to get out all the little bits, then fill your ice-cube trays with the flavored water. Freeze, and done!

Two or three cubes will flavor your water about right, and they do a dang good job of it. I’m ready to make all sorts of concoctions: peach and basil, strawberry and lime, green tea and melon, ginger and watermelon . . . and maybe a spicy hot-sauce garlic one. You know, for micheladas. We’ll see.
Flavored ice cubes are a great way to spice up your water and shake things up a bit. What flavor combinations sound good to you?
P.S. – These ice cubes are also good in gin.





What a fabulous idea! Summer seems way off here in the UK right now but I might just make some for that odd day of sunshine that surprises us every now and then! BTW any excess lemons I have in the fruit bowl, I cut into slices and freeze to pop in a G&T but I’m sure they would make a good companion to the flavoured ice cubes too!
I have a bag full of lemons in the fridge right now, and you’re making me crave a gin and tonic! But, off to work I go . . .

Where did you get this idea? I would have never thought about cucumbers to make something like this!
I like to put cucumber slices in my ice water, and a friend of mine drinks a cucumber-flavored gin, so I thought it would be refreshing with mint
