Review: Low-fat Vegan Black Bean Brownies
Well, hello there! I am back from Wisconsin and thought I’d share a quick little review with you (it’s been a while). These brownies come together quickly and use ingredients you probably already have on hand. I also want to point out that I am an omnivore and I love this recipe — please don’t be scared off by the “vegan” or by the odd ingredients!
So, this recipe from Happy Herbivore sounded a little strange, and I didn’t think it would work. I was wrong (shocking). They were delightful. Lucky for me, they are pretty not-so-bad-for you. AND the addition of beans scares Nicky too much, so I get the whole batch to myself.
Next time, I’ll add the extra oats so they’re not quite so fudgy (although this could be a result of my oven, which hates me). Also, I might try to replace some or all of the agave with brown rice syrup — just to see what happens. This recipe turned out so well that I think I’ll try this one next: low-fat pumpkin bars.
